  • Fluffy rice Use your choice of rice.
  • Homemade tzatziki sauce Store-bought tzatziki can be used as a shortcut.
  • Roasted cherry tomatoes
  • Crisp red onions
  • Fresh lemon wedge For serving.

Preparation

  • Preheat the oven as needed for baking.
  • In a bowl, combine the cubed chicken with olive oil, dried oregano, salt, and pepper.
  • Layer the seasoned chicken over fluffy rice in a baking dish.
  • Top with homemade tzatziki sauce, roasted cherry tomatoes, and red onions.
  • Bake according to your oven's settings until the chicken is cooked through.
  • Serve with a fresh lemon wedge.

Notes
