  • 3-4 pounds beef chuck roast A good cut of meat for tenderness.
  • 1 tablespoon olive oil For searing the meat.

  • 3 carrots, sliced Farm-fresh carrots add sweetness.
  • 2 potatoes, diced Yukon Gold recommended for creaminess.
  • 3 cloves garlic, minced Enhances flavor.
  • 2 cups beef broth Forms the base of gravy.
  • 1 tablespoon Worcestershire sauce Adds umami flavor.
  • 2 sprigs fresh rosemary Fresh herbs enhance flavor.
  • 2 sprigs fresh thyme Complements the beef.
  • to taste Salt and pepper Essential for seasoning.

Instructions
 

Preparation

  • Preheat your Dutch oven over medium heat. Add a little olive oil to shimmer but not smoke.
  • Season the beef chuck roast generously with salt and pepper. Add the roast to the Dutch oven to sear.
  • After a few minutes, remove the roast from the pot and set aside.
  • In the same pot, add chopped onion, sliced carrots, and diced potatoes. Sauté for about five minutes until they soften.
  • Stir in minced garlic and let it cook for an additional minute.
  • Return the seared roast back into the pot with sautéed vegetables.
  • Pour in beef broth and Worcestershire sauce, ensuring the liquid almost covers the roast.
  • Sprinkle in fresh rosemary and thyme.
  • Cover the Dutch oven, reduce heat to low, and let it simmer for 3-4 hours, until the meat is tender.
  • Carefully remove the roast from the pot and serve warm with vegetables and gravy.

Notes

For extra tender meat, consider marinating with seasoning the night before. Substitute beef broth with red wine for a deeper flavor.
