Ingredients
  

Meat and Seasoning

  • 3-4 pounds Beef chuck roast Select well-marbled meat for better flavor.
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil For searing.

Vegetables

  • 4 Carrots, chopped
  • 4 Potatoes, diced
  • 1 Onion, chopped
  • 4 cloves Garlic, minced

Broth and Seasonings

  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dried thyme Fresh thyme can also be used for added flavor.
  • 2 Bay leaves

Instructions
 

Preparation

  • Preheat your Dutch oven over medium-high heat.
  • Generously sprinkle the beef chuck roast with salt and black pepper.
  • Add olive oil and sear the seasoned roast on all sides until browned.
  • Remove the roast from the pot and set it aside.
  • Sauté chopped onion and minced garlic in the remaining oil until softened.
  • Add the chopped carrots and diced potatoes to the pot and stir.
  • Return the roast to the pot with the vegetables.
  • Pour beef broth and Worcestershire sauce over the roast.
  • Sprinkle in dried thyme and add bay leaves.
  • Bring to a gentle simmer, then cover and reduce the heat to low.
  • Cook for 3-4 hours until tender.
  • Once done, remove the roast from the pot, shred it, and serve with vegetables.

Notes

For richer flavor, cook with a splash of red wine in the broth. Always use fresh herbs when possible.
