Ingredients
  

For the cheesecake

  • 1 pkg 1 pkg (8 oz) softened cream cheese Make sure the cream cheese is softened for easy mixing.
  • 1 tsp 1 tsp vanilla
  • 1 can 1 can Eagle Brand sweetened condensed milk
  • 1/3 cup 1/3 cup lemon juice
  • 1 graham cracker pie crust 1 graham cracker pie crust You can use an Oreo crust or any other cookie crust as well.

For topping

  • 1 can 1 can favorite pie filling (cherry, strawberry, or blueberry) Chill the pie filling while the cheesecake sets.

Preparation

  • Beat the cream cheese in a mixing bowl until it’s light and fluffy.
  • Add sweetened condensed milk and blend thoroughly.
  • Stir in lemon juice and vanilla.
  • Turn the mixture into the pie crust.
  • Cover and refrigerate for 2-3 hours (or overnight); do not freeze.

Serving

  • To serve, slice the cheesecake into wedges after chilling.
  • Top with chilled pie filling before serving.
  • Add a dollop of whipped cream for extra flavor.

Notes

Let the cheesecake chill overnight for the best results. You can turn this recipe into a chocolate cherry cheesecake by adding ½ cup of melted chocolate into the cream cheese mixture before blending.
