Ingredients

  • 1 tablespoon olive oil For cooking
  • 1 small onion, chopped
  • 3 cloves garlic, crushed
  • 1 fresh red chile pepper, finely chopped Adjust quantity for desired spiciness
  • 1/4 cup dark brown sugar
  • 1 teaspoon fennel seed, crushed
  • 1 cup ketchup
  • 2 tablespoons dark soy sauce
  • Salt and pepper to taste To season

Instructions
 

Cooking

  • Heat the olive oil in a saucepan over medium heat.
  • Stir in the chopped onion, crushed garlic, finely chopped red chile pepper, dark brown sugar, and crushed fennel seeds. Cook until the onion is tender and the sugar has melted.
  • Mix in the ketchup and dark soy sauce. Bring to a boil.
  • Reduce heat to low and simmer for about 10 minutes.

Notes

Store any leftover sauce in an airtight container in the fridge for up to a week. You can make it ahead of time, and it can also be frozen for up to three months.
