  • 2 cups cooked rice Using day-old rice is ideal since it's less sticky.
  • 1 cup cooked chicken, diced You can use leftover chicken or a rotisserie chicken.
  • 1/2 cup sweet onions, chopped Adds a slight sweetness.
  • 1/2 cup carrots, diced Adds crunch and color.
  • 1/2 cup peas Frozen peas work perfectly.
  • 2 pcs eggs, beaten Creates a fluffy texture.
  • 3 pcs green onions, chopped Adds fresh flavor.
  • 3 tablespoons soy sauce Brings all the flavors together.
  • 2 tablespoons vegetable oil Can substitute with sesame oil for extra flavor.
  • to taste salt and pepper Enhances the flavors.

Preparation

  • Start by gathering and prepping all your ingredients.

Cooking

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chopped onions and diced carrots to the skillet and sauté until softened, about 3-4 minutes.
  • Push the vegetables to one side and add another tablespoon of oil to the empty side. Pour in the beaten eggs and scramble until fully cooked.
  • Add the diced chicken and the cooked rice, breaking apart the rice to heat evenly.
  • Toss in the peas and cook quickly, as they will steam in the heat.
  • Drizzle the soy sauce over the rice mixture and stir to combine.
  • Taste and adjust the seasoning with salt and pepper.
  • Stir in the chopped green onions just before serving.

Serving

  • Spoon the fried rice into serving bowls and enjoy!

Notes

You can store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet with a splash of soy sauce. Serve with crispy egg rolls or a light salad.
