  • 2 cups cooked rice Day-old rice works best as it is dryer and less sticky.
  • 1 lb chicken breast, diced Adds protein and makes the meal filling.

  • 1 cup peas Frozen peas work perfectly.
  • 2 pieces eggs Helps tie everything together.
  • 3 tablespoons soy sauce Brings everything together with flavor.
  • 2 tablespoons vegetable oil For sautéing.
  • to taste salt and pepper Essential seasonings.
  • optional sesame oil For a nutty finish.

Preparation

  • Prepare your ingredients: ensure the rice is cold and clump-free, and wash and chop fresh vegetables into bite-sized pieces.

Cooking

  • Heat the vegetable oil in a large skillet or wok over medium heat.
  • Add the diced chicken to the hot skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and fully cooked.
  • Add chopped onions and carrots to the skillet and cook for about 3 minutes until onions are soft.
  • Stir in the peas and continue to cook.
  • Push the chicken and vegetables to one side of the skillet. Crack the eggs into the space and scramble until fully cooked, then mix with the other ingredients.
  • Add cooked rice, breaking up clumps, and mix well.
  • Pour in the soy sauce, tossing to coat the rice evenly.
  • Fold in the sliced green onions and season with salt and pepper to taste.
  • Heat everything through for an additional 2-3 minutes, then serve hot.

Notes

Use day-old rice for the best texture. Experiment with different vegetables depending on your preference or what's available. Consider serving with steamed broccoli or a crunchy cucumber salad.
