Ingredients
  

For the Sauce

  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • 1/2 cup low sodium chicken broth
  • 1/3 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons Shaoxing wine or dry sherry optional
  • 1 tablespoon sesame oil
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced fresh garlic
  • 1/4 teaspoon crushed red pepper flakes

For the Stir Fry

  • 2 tablespoons vegetable oil
  • 1 pound boneless skinless chicken breast (cut into small 1-inch bite-sized pieces)
  • 2 cups broccoli florets
  • 1 medium red bell pepper (seeds and membrane discarded, cut into 1-inch pieces)
  • 1 medium onion (cut into 1-inch pieces)

Instructions
 

Preparation

  • In a small bowl, combine all the ingredients for the sauce and set aside.
  • Prep all vegetables and chicken before cooking to make the process smoother.

Cooking Chicken

  • Warm one tablespoon of vegetable oil in a large nonstick skillet or wok over medium-high heat.
  • Add the chicken, seasoning it with salt and pepper. Sauté for 5-6 minutes or until the chicken is cooked through.
  • Transfer the chicken to a plate and keep warm.

Cooking Vegetables

  • Reduce the heat to medium and add the remaining tablespoon of oil to the skillet.
  • Add broccoli, bell pepper, and onion. Sauté, stirring occasionally, until the vegetables are slightly charred and crisp-tender, about 3-4 minutes.

Combining and Serving

  • Return the cooked chicken to the skillet and toss to combine.
  • Stir the sauce, pour it over the chicken and vegetables, and mix well.
  • Bring the mixture to a boil to thicken. Then, remove from heat and stir in the scallions.
  • Serve over hot cooked rice.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to three months. Simply reheat in the microwave or on the stovetop until heated through. You can customize your veggies or make it vegetarian by replacing chicken with tofu.
