  • 1 packet taco seasoning Choose spice level according to preference.
  • 1 can chili beans, undrained
  • 1 can diced tomatoes, undrained
  • 1 bag Fritos corn chips For a crunchier texture, serve immediately after assembly.
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream Optional additional topping.
  • 1/4 cup chopped green onions Optional additional topping.
  • 1/4 cup sliced jalapeños Optional additional topping.

Preparation

  • In a large skillet over medium heat, cook the ground beef until browned.
  • Drain excess fat, then add taco seasoning according to the packet instructions.
  • Stir in the chili beans and diced tomatoes with their juices.
  • Simmer for about 5-7 minutes, until the mixture is thick and heated through.

Assembly

  • In individual bowls or a large baking dish, layer the Fritos at the bottom.
  • Spoon the beef and bean mixture over the chips.
  • Sprinkle shredded cheddar cheese on top.
  • If you like, add a dollop of sour cream, chopped green onions, and sliced jalapeños on top.

Serving

  • Serve warm, and dig into this comforting, crunchy dish!

Notes

If you have leftovers, store in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stovetop, though Fritos may lose their crunch. For variations, add guacamole or fresh salsa for a Mexican twist, or crushed tortilla chips for a classic flavor.
