  • 1.5 cups all-purpose flour The foundation of our muffins. It’s light and gives them the perfect fluffy texture.
  • 1 tbsp baking powder This little ingredient is the magic that makes our muffins rise beautifully!
  • 0.5 tsp salt A bit of salt enhances all the flavors and balances the sweetness.

Wet Ingredients

  • 0.25 cups olive oil I absolutely love using olive oil for its rich flavor and health benefits.
  • 0.5 cups milk It adds moisture to our muffins, keeping them tender and soft.
  • 1 large egg The egg helps bind everything together and adds richness.

Flavorings

  • 2 tbsp fresh rosemary, finely chopped Rosemary is the star of the show here, providing that lovely herbal aroma and flavor.
  • 2 cloves garlic, minced Garlic adds a savory punch that makes these muffins irresistible!
  • 0.25 cups grated Parmesan cheese The cheese brings a delightful creaminess and enhances the overall flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease or line your muffin tin with paper liners.
  • In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk them together until well blended.
  • In another bowl, combine the olive oil, milk, egg, chopped rosemary, and minced garlic. Whisk until smooth.
  • Gradually add the wet mixture to the dry ingredients. Stir gently until just combined.
  • Spoon the batter into each muffin cup, filling them about 2/3 full.
  • Sprinkle the grated Parmesan cheese generously over the tops of the muffins.

Baking

  • Pop the muffin tin into the preheated oven and bake for 18-20 minutes until golden brown.
  • Remove them from the oven and let them cool slightly before serving.

Notes

Make sure your baking powder is fresh and don’t rush the cooling time. Experiment with different herbs or add red pepper flakes for an extra kick. Serve well with soup or as part of a charcuterie board. Store leftover muffins in an airtight container.
