Ingredients

  • 3–4 ripe tomatoes 3–4 ripe tomatoes, sliced Use heirloom or vine-ripened tomatoes for best flavor.
  • 2 tbsp 2 tbsp olive oil
  • 1 tbsp 1 tbsp red wine vinegar or balsamic vinegar
  • 1 clove 1 garlic clove, minced Adjust according to your taste.
  • 1 tbsp 1 tbsp fresh parsley, chopped Can substitute with basil or thyme.
  • 1/2 tsp 1/2 tsp dried oregano
  • to taste Salt & black pepper
  • pinch Optional: pinch of sugar or honey for balance

Instructions
 

Preparation

  • Slice the tomatoes and arrange them in a shallow bowl or plate.
  • In a small bowl, whisk together olive oil, vinegar, garlic, parsley, oregano, salt, and pepper to create the marinade.
  • Pour the marinade over the sliced tomatoes. Let sit at room temperature for 15–30 minutes, or chill for up to 2 hours.

Serving

  • Garnish with extra herbs and serve as a side dish or salad topper.

Notes

Store leftovers in an airtight container in the fridge and consume within 2-3 days for best taste. Tomatoes may lose firmness over time due to marination.
