Dressing ingredients

Preparation

  • Start by shredding the cabbage. Use a sharp knife for thin strips and place it in a large mixing bowl.
  • Dice the two tomatoes and add them to the bowl with the cabbage.
  • Finely dice the jalapeno and add it to the bowl. Remove seeds for less heat.
  • Add the roasted corn to the bowl.
  • Chop the cilantro and sprinkle it over the mixture.
  • In a small bowl, whisk together lime juice, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Chill for about 10 minutes before serving.

Notes

Consider adding a sprinkle of sugar for sweetness. Other veggies like bell peppers or avocado can be added for richness. This coleslaw can be prepared ahead to allow flavors to meld.
