  • 1 cup unsalted butter, softened Ensure butter is at room temperature for easier mixing.
  • 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract For added flavor.
  • 2 cups all-purpose flour Do not overmix after adding.
  • 1 cup chopped pecans Toasting them can enhance flavor.
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, sugar, and powdered sugar until light and fluffy.
  • Stir in the vanilla extract.
  • Gradually add the flour and salt, mixing until combined.
  • Fold in the chopped pecans.
  • Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with a fork.
  • Bake for 12-15 minutes, until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To keep cookies fresh, store in an airtight container at room temperature for about a week. For longer storage, freeze in a freezer-safe bag or container.
