  • 1 cup unsalted butter, softened Ensure butter is softened but not melted.
  • 1/2 cup powdered sugar Can substitute with homemade powdered sugar.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Don’t overmix the dough after adding.
  • 1/2 teaspoon salt Omit if using salted butter.
  • 1 cup chopped pecans Chop to desired size for texture.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and powdered sugar until smooth.
  • Add in the vanilla extract and mix until combined.
  • Gradually add the flour and salt, mixing until a dough forms.
  • Fold in the chopped pecans.
  • Scoop tablespoon-sized portions of the dough and roll them into balls.
  • Place the dough balls on an ungreased baking sheet and flatten them slightly.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week; freeze for up to three months, separated with parchment paper. Optional: Add chocolate chips or cinnamon to the dough for flavor variations.
