Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together softened butter and powdered sugar until light and fluffy.
  • Add vanilla extract and mix until evenly incorporated.
  • In another bowl, whisk together the all-purpose flour and salt.
  • Gradually add the flour mixture to the butter mixture, folding gently until just combined.
  • Fold in the chopped pecans until evenly distributed.
  • Use a tablespoon or small cookie scoop to form dough balls and place them on a parchment-lined baking sheet, spaced apart.
  • Bake for 12-15 minutes or until edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use softened butter and measure flour correctly to avoid dry cookies. Leftovers can be stored in an airtight container for up to a week. Dough can be frozen for later use.
