Ingredients
  

For the cookies

  • 1 cup Unsalted butter, softened Using unsalted butter allows for better control over saltiness.
  • ½ cup Granulated sugar
  • ½ cup Powdered sugar Can be made from granulated sugar if needed.
  • 1 teaspoon Vanilla extract Adds comforting flavor.
  • 2 cups All-purpose flour
  • ½ teaspoon Salt
  • 1 cup Chopped pecans Can be substituted with walnuts or almonds.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until the mixture is light and fluffy (about 3-5 minutes).
  • Stir in the vanilla extract.
  • In another bowl, whisk together the flour and salt.
  • Gradually add the dry ingredients to the butter mixture and mix until just combined.
  • Gently fold in the chopped pecans.
  • Using a teaspoon or a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to wire racks to cool completely.

Notes

Cookies pair beautifully with coffee or tea; can also be served with ice cream.
