  • 4 cups low-sodium chicken broth Base of the soup, controls saltiness.
  • 2 medium green onions Use white parts for cooking and green tops for garnishing.
  • 1 thumb-sized piece fresh ginger Chopped, adds warmth and flavor.
  • 2-3 large eggs Beaten, adds the signature silky texture.

Preparation

  • Gather your ingredients and prepare your workspace.
  • Slice the white parts of the green onions and save the green tops for garnishing.
  • Peel and finely chop the ginger.

Cooking

  • In a medium pot, add the chicken broth and bring to a gentle simmer at medium heat.
  • Add the chopped ginger and the white parts of the green onions to the pot. Let them simmer for about 5 minutes.
  • In a bowl, crack the eggs and whisk them gently until well combined.
  • Reduce the heat to low and stir the simmering broth gently to create a whirlpool effect.
  • Slowly pour the beaten eggs into the pot while stirring. Let it cook for about a minute until the eggs form ribbons.
  • Remove the pot from heat and add the green tops of the green onions.
  • Season the soup with salt and pepper to taste.
  • Serve hot, garnished with more green onions if desired.

Notes

For a thicker soup, you can add cornstarch mixed with water before adding the eggs. Adjust seasoning to your taste.
