  • 2 scallions chopped These add a touch of freshness and sharpness.
  • to taste salt Essential for enhancing all the flavors.
  • to taste white pepper It gives a subtle warmth and slight kick to the dish.
  • for frying oil Choose a neutral oil like canola; it helps create that perfect crispy texture.

Preparation

  • Begin by cracking the eggs into a large bowl. Add a pinch of salt and white pepper, whisking them together until well combined and frothy.
  • Chop your vegetables and shred the cooked chicken while whisking the eggs, preparing everything before cooking.
  • Gently fold in the bean sprouts, cooked chicken, diced bell pepper, celery, mushrooms, onion, and scallions into the egg mixture.

Cooking

  • In a large skillet, heat 2 tablespoons of oil over medium heat until hot enough for the egg mixture to sizzle upon contact.
  • Pour a portion of the egg mixture into the skillet, avoiding overcrowding, and cook each omelet for about 2-3 minutes until the edges start to set and the bottom is golden brown.
  • Carefully flip the omelet using a spatula and cook for an additional 2-3 minutes until golden brown on the other side.
  • Remove the cooked omelet from the skillet and place it on a warm plate. Add more oil if necessary and repeat with the remaining mixture.
  • Serve hot with a drizzle of gravy or soy sauce.

Notes

For garnish, you can add fresh herbs like cilantro or sesame seeds before serving. Experiment with other vegetables or proteins such as zucchini, carrots, or shrimp for variations!
