Ingredients
  

For the nachos

  • 1 packet Taco Seasoning (or 1 packet/store-bought) Season according to taste.
  • 1 pound Ground beef
  • 1/2 piece Yellow onion, diced adds flavor to the beef.
  • 32 ounces Tortilla chips 2 bags of 16 ounces each.
  • 1 can Refried beans Can also use black beans or a bean dip.
  • 16 ounces Shredded cheese (like cheddar and Monterey jack) Can substitute with pepper jack for a spicier flavor.
  • 3 pieces Roma tomatoes, diced For fresh toppings.
  • 2-3 pieces Green onions, sliced Adds fresh flavor.

Preparation

  • Preheat the oven to 400°F.
  • In a large skillet over medium-high heat, brown the ground beef for 5 to 8 minutes.
  • Add the diced onions and cook until softened and translucent.
  • Drain any excess fat from the skillet.
  • Return the beef and onion mixture to the pan, add taco seasoning and about 3/4 cup of water, and let it simmer.
  • Line two baking sheets with parchment paper.
  • Layer tortilla chips on the sheets.
  • Spoon half of the refried beans onto each tray over the chips.
  • Divide the beef mixture evenly between the two pans.
  • Generously sprinkle shredded cheese over each pan.
  • Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.
  • Once done, add the diced tomatoes and sliced green onions on top before serving.

Notes

Tops tips: Drain the fat for less grease. For extra cheesiness, layer cheese before the beef and beans. Use jalapeños for added spice. Keep an eye on them while baking.
