Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil over medium heat and sauté the spinach until it wilts, about 2 minutes.
  • Add the dried cranberries and cook for another minute.
  • Remove the skillet from heat and set the mixture aside to cool.
  • Slice a pocket into each chicken breast, ensuring not to cut all the way through.
  • Generously stuff each chicken breast with the spinach and cranberry mixture, adding brie cheese cubes.
  • Secure the chicken breasts with toothpicks or kitchen twine.

Cooking

  • In an oven-safe skillet, heat more olive oil over medium-high heat and sear the stuffed chicken for 4-5 minutes on each side until golden brown.
  • Whisk together honey, balsamic vinegar, and melted butter in a small bowl.
  • Drizzle half of the mixture over the chicken while it's still in the skillet.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (165°F).
  • Let the chicken rest for 5 minutes before slicing and garnish with fresh thyme leaves.

Notes
