  • 3 large eggs, separated Yolks provide richness, while whites create fluffy peaks.
  • 1/4 cup almond flour Can substitute with a gluten-free flour blend.
  • 1/4 tsp baking powder Helps the bread rise.
  • 1/4 tsp salt Enhances flavors.
  • 1/2 tsp garlic powder (optional) Adds a hint of garlic flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.

Mixing Ingredients

  • In a large bowl, whip your egg whites until they form stiff peaks.
  • In a separate bowl, combine cottage cheese, egg yolks, almond flour, baking powder, salt, and garlic powder. Mix until smooth.
  • Gently fold the whipped egg whites into the cottage cheese mixture.

Baking

  • Scoop dollops of the mixture onto the prepared baking sheet.
  • Bake for about 25-30 minutes until golden brown.
  • Let the cloud bread cool slightly before moving them.

Serving

  • Serve fresh, use as a sandwich base or enjoy as a snack.

Notes

For extra crispy bottoms, place the baking sheet directly on the oven rack towards the end of baking. Ensure egg whites are at room temperature for better volume.
