Preparation

  • Heat the olive oil and butter in a large skillet over medium heat.
  • Add the thinly sliced onions to the skillet and cook until caramelized, about 15-20 minutes, stirring occasionally.
  • Once caramelized, season the onions with thyme, salt, and pepper.
  • Push the onions to the side of the skillet and add the chicken cutlets, searing each side until golden brown, about 5-7 minutes per side.
  • Pour in the beef broth and let everything simmer for about 10 minutes.
  • Sprinkle the Parmesan and Swiss cheese over the chicken, cover the skillet to allow the cheese to melt.
  • Garnish the dish with fresh parsley before serving.

Notes

To elevate the flavor, consider adding a splash of white wine when you pour in the beef broth. Letting your onions caramelize slowly is key; don’t rush it. For serving, this dish pairs well with egg noodles, rice, or mashed potatoes.
