  • 1 cup Rice preferably white rice
  • 2 cups Broth (beef or vegetable) use quality broth for best flavor
  • 2 large Onions (thinly sliced) use fresh onions for better taste
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Thyme fresh or dried
  • To taste Salt and pepper
  • 1 cup Gruyère cheese (for topping, grated) can substitute with mozzarella or cheddar
  • As desired Chopped parsley (for garnish)

Instructions
 

Caramelizing the Onions

  • In a large skillet, melt the butter and olive oil over medium heat.
  • Add the thinly sliced onions and stir gently, letting them cook slowly.
  • Stir occasionally until they turn a lovely golden brown color, about 20-25 minutes.
  • Tip: Patience is key! The longer you let them cook, the richer the flavor will be.

Preparing the Rice

  • Once the onions are caramelized, stir the rice into the pan, coating it with the onion mixture.
  • Cook for an additional 2-3 minutes to allow the rice to soak up the flavor.

Adding the Broth

  • Carefully pour in the broth while stirring gently to combine all ingredients.
  • Sprinkle in the thyme and season with salt and pepper to your liking.
  • Bring the mixture to a boil.

Simmering the Dish

  • Once boiling, reduce heat to low, cover the skillet, and let it simmer for about 18-20 minutes, or until rice is cooked.
  • Note: Keep an eye on it to prevent sticking to the bottom.

Baking with Cheese

  • Preheat the oven broiler.
  • Transfer the cooked rice mixture to an oven-safe dish.
  • Sprinkle the Gruyère cheese generously on top.
  • Place it under the broiler for 2-3 minutes until the cheese is bubbly and golden brown.

Garnishing and Serving

  • Remove from oven and garnish with chopped parsley before serving.

Notes

Use fresh ingredients and quality broth for best results. Leftovers can be stored in an airtight container for 3-4 days. Reheat gently with a splash of broth or water.
