Ingredients
  

Main Ingredients

  • 16 slices slices bologna
  • 1/4 cup mayonnaise
  • 3 tablespoons Creole mustard such as Zatarain's
  • 4 tablespoons butter softened
  • 8 slices Texas toast or other thick white bread
  • 4 slices American cheese
  • 2 cups shredded iceberg lettuce
  • 4 thick slices tomato
  • 16 pieces bread and butter pickle chips
  • 2 cups thin dill pickle potato chips

Instructions
 

Preparation

  • Preheat the oven to 250°F and line a sheet pan with foil.
  • Stack the bologna slices and cut 4 small notches around the edge of each slice.
  • In a small bowl, stir together mayonnaise and mustard and refrigerate until ready to use.

Cooking

  • Spread butter evenly on one side of each bread slice. Heat a large skillet or griddle over medium heat.
  • Arrange bread in the pan, buttered side down. Cook until toasted, about 2-3 minutes, then flip and toast the other side for another 1-2 minutes. Remove the bread to a wire rack.
  • Increase the heat to medium-high. Place 4 bologna slices in the skillet and cook until lightly charred, about 2 minutes on each side. Press down on the center if they puff up.
  • Arrange the cooked bologna on the prepared pan and keep warm in the oven. Once all bologna is cooked, top each stack with a slice of cheese and place back in the oven until the cheese melts, about 2-3 minutes.

Assembly

  • Spread the mayo mixture over the unbuttered sides of the toast.
  • Place 4 pieces of toast, mayo side up, on a work surface. Layer each with 1/2 cup of lettuce, 1 tomato slice, 4 pickle slices, and a stack of the bologna. Top with 1/2 cup of chips and a slice of bread.

Notes

Serve these sandwiches warm. They can be enjoyed as a main dish or cut into halves or quarters for a snack. Pair them with chips or a simple salad for a complete meal. For an extra crunch, try adding crispy bacon. Feel free to use different types of bread or toppings.
