Main Ingredients

  • 1 cup Cornmeal Use fresh cornmeal for best flavor.
  • 1 cup Buttermilk Adds a delicious tang to the hoecakes.
  • 1 large Egg
  • 1 tsp Baking powder
  • 1 tsp Salt

For Frying

  • to taste Vegetable oil Use enough to cover the bottom of the frying pan, about 1/4 inch.

Preparation

  • Gather all the ingredients you'll need for the hoecakes.
  • In a large bowl, combine cornmeal, buttermilk, egg, baking powder, and salt. Whisk until smooth.
  • In a frying pan, heat enough vegetable oil over medium heat until hot but not smoking.

Cooking

  • Using a ladle, scoop out some batter and pour it into the hot oil, making hoecakes about the size of your palm.
  • Fry for 3-4 minutes on one side until golden brown.
  • Flip the hoecake and fry the other side until similarly golden.
  • Remove the hoecake and place it on a paper towel to drain excess oil.
  • Repeat the process with the remaining batter.

Serving

  • Serve hoecakes warm, and watch everyone's faces light up when they take a bite!

Notes

These hoecakes can be served with honey or syrup and pair well with fried chicken and greens. Leftovers can be stored in an airtight container in the fridge for about three days.
