  • 2 pieces eggs Fresh eggs of your choice.
  • 4 slices bacon Crisp and smoky for flavor.
  • 1-2 cups mixed greens or lettuce Fresh veggies add color and crunch.
  • 1/4 cup croutons Perfect for that delightful crunch.
  • 1/4 cup shredded cheese Optional, sharp cheddar is recommended.
  • Salt and pepper To taste.
  • Fresh parsley, chopped For garnish.
  • Olive oil or butter For frying.

Cooking

  • Heat a skillet over medium heat and add the 4 slices of bacon. Cook until crispy, about 5 to 7 minutes, then remove and chop.
  • In the same skillet, optionally drain some bacon grease, then add olive oil or butter. Crack 2 eggs into the skillet and cook to your liking, seasoning with salt and pepper.
  • In a bowl, combine mixed greens with olive oil, salt, and pepper. Toss gently, and top with chopped bacon and croutons.
  • Serve by placing the fried eggs on top of the salad, garnishing with fresh chopped parsley.

Notes

For ultra-crispy bacon, avoid overcrowding the pan. Customize with different greens or add homemade croutons for extra flavor.
