Preparation

  • Preheat your skillet by heating oil over medium heat.
  • Wash and peel the russet potatoes and cut them into 1/2" cubes.

Cooking

  • Once the oil is heated, carefully add the diced potatoes to the skillet.
  • Add the sliced smoked sausage and stir occasionally while cooking.
  • If using onion, add it after about 5 minutes when the potatoes are starting to soften.
  • Cook everything together for about 10-15 minutes until the potatoes are golden brown and fork-tender.
  • Season with salt and pepper to taste before serving.
  • Serve warm directly from the skillet.

Notes

Use fresh ingredients for better flavor. Don’t overcrowd the pan while frying. You can make variations using different sausage or adding vegetables.
