  • 2 lbs baby red potatoes (or regular red/gold), cut into 1-1½ inch pieces
  • 1 unit onion, sliced into thick half circles
  • 1 unit red bell pepper, cut into 1-inch pieces
  • 8 oz smoked sausage or kielbasa, cut into 1-inch pieces
  • 8 oz fresh mushrooms, halved or quartered

Seasoning and Oil

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme
  • 1 tbsp spice/dry herb blend
  • Salt and ground black pepper to taste

Garnish

  • Fresh herbs (parsley, thyme, chives, dill) for garnish

Instructions
 

Preparation

  • Preheat the oven to 475°F (with a large baking sheet inside).
  • Boil the potatoes in water for 5 minutes until halfway cooked, then drain.
  • In a bowl, combine the onion, bell pepper, mushrooms, olive oil, garlic, thyme, salt, pepper, and dry herbs.
  • Toss the potatoes with the veggie and sausage mixture.

Cooking

  • Spread everything on the hot baking sheet in one layer.
  • Roast for 20-30 minutes, stirring halfway, until golden brown. Broil for extra crispiness if desired.
  • Garnish with fresh herbs before serving.

Notes

Ensure uniform cutting of the vegetables and sausage for even cooking. Use a heavy baking sheet for optimal crispiness. For added spice, consider using red pepper flakes or hot sauce.
