  • 3 tablespoons butter, divided
  • 2 large eggs, whisked
  • 2 medium carrots, peeled and diced
  • 1 small white onion, diced
  • 0.5 cup frozen peas
  • 3 cloves garlic, minced
  • Salt and black pepper, to taste
  • 4 cups cooked and chilled rice (preferably short-grain white rice) Cold rice gives better texture.
  • 3 stalks green onions, thinly sliced For garnish and flavor.
  • 3-4 tablespoons soy sauce, or more to taste Adjust according to preference.
  • 2 teaspoons oyster sauce (optional)
  • 0.5 teaspoon toasted sesame oil

Instructions
 

Preparation

  • Heat 1/2 tablespoon of butter in a large sauté pan over medium-high heat until melted.
  • Add the whisked eggs and cook until scrambled, stirring occasionally. Remove eggs and transfer to a separate plate.

Cooking

  • In the same pan, add 1 additional tablespoon of butter and heat until melted.
  • Add the diced carrots, onion, peas, and garlic. Season with salt and black pepper. Sauté for about 5 minutes until the onions and carrots are soft.
  • Increase the heat to high. Add the remaining 1 1/2 tablespoons of butter and stir until melted.
  • Add the chilled rice, green onions, soy sauce, and oyster sauce (if using). Stir until everything is combined.
  • Continue sautéing for an additional 3 minutes to fry the rice, stirring occasionally. Let the rice rest between stirs for extra crispiness.
  • Stir in the scrambled eggs to combine with the rice.
  • Remove from heat and stir in the sesame oil. Adjust the seasoning with extra soy sauce if needed.

Notes

Store leftover fried rice in an airtight container in the fridge for up to 3 days. Reheat in a pan or microwave until hot. Feel free to customize with additional vegetables or proteins. Use cold, leftover rice for best texture.
