Main Ingredients

  • 2 cups long grain white rice, cooked and cooled Use leftover rice for best texture.
  • 1 lb chicken breast, cut into small pieces
  • 6 slices bacon, chopped Can substitute with turkey bacon for a healthier option.
  • 2 tbsp sesame oil
  • 12 oz bag frozen mixed veggies Feel free to add any vegetables you like.
  • 1 tsp salt Adjust to taste.
  • 1 tsp pepper Adjust to taste.
  • 1 tsp garlic powder Adjust to taste.
  • 4 pieces eggs Scramble until fully cooked.
  • 1-2 tbsp low sodium soy sauce Adjust to taste.
  • 4-6 pieces chopped green onions For garnish.
  • to taste Buffalo Wild Wings Sweet and Sour Sauce For serving.

Preparation

  • Cook the rice according to package directions, let it cool, and refrigerate for a couple of hours or overnight.

Cooking

  • Heat a griddle to medium heat and add 1 tablespoon of sesame oil.
  • Add the chicken and chopped bacon. Season with salt, pepper, and garlic powder, and cook while stirring.
  • Once the bacon is cooked, scoot it to one side and add the cooked rice onto the griddle.
  • Add more sesame oil and season the rice with salt, pepper, and garlic powder.
  • Drizzle soy sauce over the rice, adjusting it to taste.
  • Place the frozen veggies next to the rice and stir everything together.
  • Make a well in the rice, add more oil and the eggs, scrambling them until fully cooked.
  • Mix in the cooked chicken and veggies.
  • Spread the mixture out on the griddle and allow it to cook until golden brown, then top with chopped green onions and serve with Sweet and Sour sauce.

Notes

To store leftover fried rice, let it cool completely, then place it in an airtight container. It will keep in the refrigerator for up to 3-4 days or can be frozen for up to 2 months. When ready to eat, reheat thoroughly.
