  • 500 g Baby potatoes

  • 4 tablespoons Butter
  • 1 cup Mozzarella cheese, shredded
  • Salt and pepper To taste.
  • Fresh parsley For garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse the baby potatoes, trim any bad spots, and slice them in half.
  • Arrange the potatoes in a baking dish.
  • Season the chicken breasts with salt and pepper on both sides.
  • In a small saucepan over medium heat, melt the butter and add the minced garlic until fragrant.
  • Drizzle the garlic butter over the chicken and potatoes, ensuring they are well covered.
  • Sprinkle shredded mozzarella cheese over the chicken and potatoes.

Cooking

  • Bake in the preheated oven for about 25-30 minutes until the chicken is cooked through and potatoes are tender.
  • Garnish with fresh parsley before serving.

Notes

For extra crispy skin, broil the chicken for the last few minutes of cooking. Store leftovers in an airtight container for 3-4 days and reheat in the oven or microwave.
