  • 2 lbs chicken breast or thighs, cut into bite-sized pieces

For the Cheesy Roasted Potatoes

  • 4 medium potatoes, cubed The star of our roasted side
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese A double dose of cheesy goodness
  • 1 tbsp garlic powder Yes, more for the potatoes
  • 1 tbsp parsley

Instructions
 

Preparing the Cheesy Roasted Potatoes

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the cubed potatoes with olive oil, garlic powder, parsley, salt, and pepper until they are well-coated.
  • Spread the potatoes onto a baking sheet in a single layer.
  • Roast in the oven for about 25 to 30 minutes, or until they look golden and delicious.
  • During the last 5 minutes of baking, sprinkle shredded cheddar and grated Parmesan cheese over the potatoes. Return them to the oven until the cheese is melted and bubbly.

Cooking the Chicken Bites

  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the minced garlic and sauté for about 1 to 2 minutes until fragrant.
  • Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6 to 8 minutes.

Making the Parmesan Cream Sauce

  • In a small saucepan, combine heavy cream, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Cook over low heat, stirring continuously until the cheese has melted and the sauce is smooth, about 3 to 5 minutes.

Combine and Serve

  • Once the chicken is fully cooked, remove it from heat and pour the Parmesan cream sauce over it. Toss to coat.
  • Serve the chicken alongside the cheesy roasted potatoes, garnished with fresh parsley.

Notes

Use fresh garlic for the best flavor and consider adding fresh herbs like rosemary or thyme to the chicken. For extra crispy potatoes, avoid overcrowding the baking sheet.
