  • for garnish Fresh parsley Because we eat with our eyes first.
  • for serving Lemon wedges A squeeze of fresh lemon just before eating is heavenly.

For the scallops

  • 1/2 lb sea scallops, patted dry Succulent and sweet, scallops are delightful when cooked right.
  • 2 tbsp unsalted butter More butter never hurts, especially for the scallops.
  • 1 tbsp olive oil Helps to sear the scallops perfectly without sticking.

Instructions

Preparation

  • Preheat your oven’s broiler.
  • Line a baking sheet with parchment paper.
  • Gently cut through the top of each lobster tail, running your knife down the center, and pull the meat out slightly.
  • In a small bowl, mix together the melted butter, minced garlic, lemon juice, paprika, salt, and pepper.
  • Generously brush your garlic butter mixture over the lobster tails.

Cooking

  • Place the lobster tails in the oven under the broiler and cook for about 8-10 minutes, basting halfway through.
  • While the lobster is broiling, pat the scallops dry with paper towels.
  • In a skillet, heat the olive oil over medium-high heat and add the scallops. Let them cook for 2-3 minutes without moving them.
  • Gently flip the scallops and cook for another 2-3 minutes until they are golden and cooked through.
  • Remove the cooked scallops from the pan, melt 2 tablespoons of butter in the same skillet, and add a little more minced garlic. Cook until fragrant.
  • Add the scallops back into the garlic butter and toss to coat.

Serving

  • Arrange the lobster and scallops on a serving platter, garnish with fresh parsley, and serve with lemon wedges.

Notes

Make sure your lobster is fresh; it makes a world of difference in flavor. Don't overcrowd the pan when cooking scallops. Adding a splash of white wine to the garlic butter mixture for added flavor is also a great option.
