  • 2 pieces chicken breasts, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce Adjust to suit your taste; low-sodium option available.
  • 1 tablespoon vegetable oil
  • 1 piece green onion, sliced For garnish.
  • Salt and pepper to taste

Cooking

  • Heat the vegetable oil in a large pan over medium-high heat.
  • Add the diced chicken and cook until browned and cooked through.
  • Add the minced garlic and cook for an additional minute.
  • Stir in the chilled rice and soy sauce, mixing well.
  • Cook until the rice is heated through.
  • Add the sliced green onion and season with salt and pepper to taste.
  • Serve hot.

Notes

Garnish with extra sliced green onion for a fresh touch. Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave or on the stovetop.
