  • 4 pieces boneless, skinless chicken breasts
  • 1 cup mozzarella cheese, shredded or sliced
  • 4 cloves garlic, minced
  • 0.5 tsp dried oregano
  • 0.5 tsp Italian seasoning
  • 0.5 tsp paprika
  • 1 tbsp fresh parsley, chopped for garnish
  • to taste Salt & pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 0.25 cup cooked bacon bits
  • Optional: toothpicks to secure

Instructions
 

Preparation

  • Preheat grill to medium-high heat.
  • Butterfly each chicken breast by slicing horizontally but not all the way through.
  • Season both sides inside and out with salt, pepper, paprika, oregano, and Italian seasoning.
  • Stuff each chicken breast with mozzarella and a sprinkle of minced garlic. Secure with toothpicks if needed.

Cooking

  • Heat olive oil and butter in a pan. Sear the chicken for 2-3 minutes per side until browned.
  • Transfer the chicken to the grill or bake at 400°F (200°C) for 18-22 minutes until cooked through and the cheese is melted.
  • Top each breast with bacon bits and drizzle with the garlic butter from the pan.
  • Garnish with parsley and serve hot.

Notes

Make sure not to overstuff the chicken to prevent the cheese from leaking out during cooking. For extra flavor, you can add herbs or spices of your choice to the stuffing. If you don’t have a grill, you can also cook the chicken entirely in the oven or use a stovetop grill pan.
