Ingredients
  

Main ingredients

  • 1 lb shiitake mushrooms, sliced
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced (optional) Add for extra flavor
  • 1 head bok choy, chopped

Sauce ingredients

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional) Can be omitted for a vegan dish
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil For cooking
  • 1 tsp cornstarch (mixed with 2 tbsp water to make a slurry)

Seasoning

  • to taste Pepper

Instructions
 

Cooking

  • Heat vegetable oil in a wok or large skillet over medium-high heat. Add garlic and ginger (if using) and sauté for about 30 seconds until fragrant.
  • Add shiitake mushrooms and stir-fry for 5-7 minutes until softened and slightly browned.
  • Add bok choy and continue to stir-fry for another 3-5 minutes until wilted but still crisp.
  • In a small bowl, whisk together soy sauce, oyster sauce (if using), and cornstarch slurry.
  • Pour the sauce over the vegetables and mushrooms. Stir-fry for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
  • Drizzle with sesame oil and season with salt and pepper to taste.
  • Serve hot with rice or noodles.

Notes

For an extra crunch, consider adding a handful of cashews or peanuts at the end of cooking. You can also adjust the sauce ingredients to suit your taste. Make sure to cut the bok choy into even pieces for even cooking.
