Ingredients
  

Pasta Ingredients

  • 8 oz Pasta (spaghetti or fettuccine) You can also experiment with different types of pasta.

Sauce Ingredients

  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced Using fresh garlic makes a difference.
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper To taste
  • Fresh parsley, chopped For garnish

Instructions
 

Preparation

  • Fill a large pot with water, add a bit of salt, and bring it to a roaring boil.
  • Add your pasta and cook it according to package directions until al dente. Stir occasionally.
  • Drain the pasta using a colander and set it aside. Do not rinse it.

Cooking the Sauce

  • In the same pot, pour in 2 tablespoons of olive oil and heat over medium heat until shimmering.
  • Add minced garlic and sauté for about a minute until fragrant.
  • Pour in 1 cup of heavy cream and stir it gently. Bring it to a simmer.
  • Stir in 1 cup of grated Parmesan cheese until melted and creamy.
  • Add the drained pasta to the sauce, tossing well to coat each strand.
  • Season with salt and pepper to taste.

Serving

  • Plate the pasta and garnish with chopped fresh parsley before serving.

Notes

For creamier sauce, consider adding a splash of pasta water. Add crushed red pepper flakes for spice if desired. Best enjoyed fresh.
