Preparation

  • Wash the new red potatoes thoroughly under cold water.
  • Cut the potatoes into even chunks, about 1-inch in size.
  • Pat them dry with a kitchen towel.
  • Mince the fresh garlic.

Cooking

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss the potato chunks with olive oil until well coated.
  • Add salt, black pepper, dried rosemary, and minced garlic to the potatoes.
  • Spread the potato mixture in a single layer on a baking sheet.
  • Roast for 25-30 minutes, flipping halfway through.
  • For extra crispiness, broil for an additional 2-3 minutes at the end, watching them closely.

Notes

Leftover potatoes can be stored in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for about 10 minutes to regain crispiness.
