Instructions

Cooking Pasta

  • Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente.
  • Once done, drain the pasta in a colander but do not rinse.

Cooking Shrimp

  • In a large skillet, heat olive oil over medium heat and sauté minced garlic until golden and fragrant, about 1-2 minutes.
  • Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
  • Deglaze the pan with white wine, scraping up any stuck bits, and let simmer for 2-3 minutes.
  • If desired, sprinkle in red pepper flakes and adjust according to spice preference.
  • Add the drained pasta to the skillet and toss everything together. If it appears dry, add a splash more olive oil or pasta water.
  • Add lemon juice and zest, tossing to ensure even coating.
  • Finish with chopped parsley and give a gentle toss.
  • Serve warm, topped with grated Parmesan cheese.

Notes

For perfect results, use fresh shrimp, don’t overcook the shrimp, and reserve some pasta water to adjust sauce consistency if needed.
