Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts The star of the show! Juicy and tender.

  • 1 cup all-purpose flour Essential for getting that crispy coating.
  • 2 large eggs, beaten The binding agent that helps the breadcrumbs stick.
  • 1 cup breadcrumbs Adds a golden crunch; seasoned breadcrumbs preferred.
  • 1/2 cup grated Parmesan cheese Adds a nutty, salty flavor.
  • 3 tbsp olive oil For frying the chicken and achieving golden color.

For the sauce

  • 2 tbsp butter Adds richness to the sauce.
  • 1 cup mushrooms, sliced Adds earthy flavors.
  • 2 cloves garlic, minced Brings aromatic depth.
  • 1 cup heavy cream Makes the sauce luxuriously creamy.
  • 1/2 cup chicken broth For flavoring the sauce.
  • to taste salt and pepper Season to taste.

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper.
  • Dredge each seasoned chicken breast in flour, coating all sides and shaking off excess.
  • Dip the floured chicken into the beaten eggs, ensuring full coverage.
  • Combine breadcrumbs with half of the grated Parmesan cheese, then coat each chicken breast in the breadcrumb mixture.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Fry the chicken breasts for about 5-6 minutes on each side until golden brown and crispy.
  • Remove chicken from skillet and place on a plate lined with paper towels.
  • In the same skillet, melt the butter, then add sliced mushrooms and minced garlic, sautéing until softened.
  • Pour in chicken broth and simmer for a few minutes, scraping brown bits from the pan.
  • Stir in heavy cream and remaining Parmesan cheese, allowing to thicken slightly over low heat. Season with salt and pepper.
  • Return crispy chicken to the skillet, spoon sauce over, and warm through.
  • Garnish with fresh parsley before serving warm.

Notes

For crispier skin, let the breaded chicken rest for 10 minutes before frying. Use a meat thermometer to ensure doneness at 165°F.
