Ingredients
  

Main Ingredients

  • 225-250 g halloumi (block, Cyprus made PDO stamped recommended)
  • 2 tbsp olive oil
  • 1.5 tbsp honey (or maple syrup as a substitute) eyeball it
  • 0.5 tsp fresh thyme leaves and tiny sprigs
  • 2-3 pinches chili flakes optional

Instructions
 

Preparation

  • Cut halloumi into 1-1.25 cm thick slices (0.4 - 0.5 inches). Place the slices on a paper towel and pat the surface dry.
  • Warm a serving plate.

Cooking

  • Heat the oil in a non-stick pan over medium-high heat.
  • Carefully place the halloumi in the pan. Cook for 1.5 minutes or until the underside is golden, shuffling to ensure even cooking.
  • Turn gently and cook the other side for 1 - 1.5 minutes until golden.
  • Transfer onto the serving plate.
  • Drizzle with honey and sprinkle with thyme and chili flakes if using. Some slices can have full honey coverage, while others can just have a drizzle.
  • Serve immediately, while hot and crispy!

Notes

Pat the halloumi dry before frying for a crispy texture. Use a non-stick pan to prevent sticking, and don't overcrowd the pan; fry in batches if necessary. Adjust the honey and thyme to your taste; feel free to be creative with flavors.
