Grandma Maggio's Spaghetti Sauce

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 1 whole head garlic, peeled and chopped
  • 2 cups sliced fresh mushrooms
  • 1/2 cup chopped fresh basil leaves or to taste
  • 1 can whole peeled tomatoes (28 ounces)
  • 1 can tomato sauce (15 ounces)
  • 1 can tomato paste (6 ounces)
  • 3/4 cup Merlot wine
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons dried oregano
  • 1/4 cup white sugar

Instructions
 

Preparation

  • Heat the olive oil in a large saucepan over medium-low heat.
  • Add the chopped onion and garlic. Cook and stir until they are translucent but not browned (about 6 to 7 minutes).
  • Stir in the sliced mushrooms and fresh basil. Cook until the basil is wilted and the mushrooms have released their juices (about 10 minutes).
  • Pour in the whole peeled tomatoes and bring everything to a boil. Use a spoon to chop the tomatoes as you stir.
  • Add the tomato sauce and stir, crushing any large pieces of tomato left. Bring it to a simmer.
  • Let the sauce simmer until it thickens slightly and bubbles (about 15 minutes), stirring occasionally.
  • Stir in the tomato paste. Fill the empty tomato paste can with Merlot wine and swirl it to mix in any leftover paste.
  • Pour the wine into the sauce and stir well. Bring it back to a simmer.
  • Add in the salt, black pepper, dried oregano, and sugar. Let it simmer for about 3 more minutes, until everything is nicely blended.

Notes

Serve this sauce over spaghetti or your favorite pasta. Top with grated Parmesan cheese and fresh basil. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
