  • 3 large eggs
  • 1 cup 2% milk
  • 3 tablespoons butter, melted
  • 1 tablespoon sugar
  • 1 tablespoon finely chopped onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups fresh or frozen corn
  • 3/4 cup crushed saltines (about 23 crackers), divided

Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a large bowl, whisk together the eggs, milk, melted butter, sugar, chopped onion, salt, and pepper until everything is well combined and smooth.
  • Stir in the corn and 1/2 cup of the crushed saltines until mixed.
  • Pour this mixture into a greased 11/2-quart baking dish.
  • Sprinkle the remaining crushed saltines evenly over the top.

Baking

  • Bake uncovered for 55–65 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Notes

Make sure to grease the baking dish well to prevent sticking. Adjust the seasoning according to your taste. You can add garlic powder or paprika for extra flavor. For a creamier texture, substitute heavy cream for the milk. Leftovers can be stored in the refrigerator for up to 3 days.
