  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Uncooked rice (preferably long grain)
  • 1 can (15 oz) Chickpeas (canned, drained and rinsed)
  • 2 cups Fresh spinach
  • 2 cups Diced tomatoes (fresh or canned)
  • 1 each Fresh lemon (juice and zest)
  • 1/2 cup Feta cheese (crumbled) Adds creaminess
  • 2 tablespoons Olive oil For searing chicken
  • 2 cups Chicken broth For cooking rice
  • Salt and pepper To taste
  • 1 teaspoon Dried oregano (optional)

Instructions
 

Preparation

  • Season your chicken breasts with salt, pepper, and dried oregano, coating them evenly.
  • In a large pot, heat olive oil over medium heat and sear the seasoned chicken for about 4-5 minutes on each side until lightly browned.
  • Remove the chicken from the pot and set aside on a plate.
  • In the same pot, add uncooked rice and toast for about 2 minutes.
  • Pour in the chicken broth along with the juice and zest of the lemon, stirring to combine.
  • Add the drained chickpeas, fresh spinach, and diced tomatoes, mixing well.

Cooking

  • Nestle the seared chicken back into the pot on top of the rice mixture.
  • Bring to a gentle simmer, cover the pot, and reduce heat to low. Cook for about 20 minutes.
  • Check for doneness; ensure rice is cooked and chicken is tender.
  • Fluff the rice using a fork and combine the chicken, rice, and veggies gently.
  • Sprinkle crumbled feta cheese over the top to let it melt slightly.
  • Serve in warm bowls, garnished with parsley or extra feta if desired.

Notes

For crispy skin, ensure the pot is hot when searing. Allow chicken to rest after cooking for juiciness. Experiment with herbs for variations.
