Preparation

  • Start by rinsing the rice under cold water until the water runs clear to remove excess starch.

Cooking

  • In a medium saucepan, combine the rice, water or broth, lemon juice, and zest. Stir to mix.
  • Bring this mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the water has been absorbed.
  • Do not lift the lid during cooking to retain steam.

Fluffing the Rice

  • When cooking time is done, remove the pan from heat and let it sit for a few minutes with the lid on.
  • After resting, fluff the rice gently with a fork.

Finishing Touches

  • Stir in the olive oil, fresh parsley, and season with salt and pepper to taste.
