  • 3 cups cooked chicken, shredded Use leftover rotisserie chicken or cook your own.
  • 1 cup sour cream Brings creamy texture and balances spices.
  • 1 cup Monterey Jack cheese, shredded Melts beautifully and adds mild flavor.
  • 1 cup pepper jack cheese, shredded For a little extra kick; can substitute with more Monterey Jack.
  • 6 large flour tortillas Preferred for easy rolling.

Sauce and Toppings

  • 2 cups green chili enchilada sauce Canned or homemade for flavor.
  • 1 cup cheese, for topping, shredded Extra cheese on top is a requirement!

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, sour cream, Monterey Jack cheese, and pepper jack cheese. Mix gently until well blended.
  • Spoon about 2-3 tablespoons of the chicken mixture onto the center of each tortilla, roll tightly, and place seam-side down in a baking dish.

Baking

  • Pour the green chili enchilada sauce over the rolled tortillas, ensuring they are well coated.
  • Sprinkle a generous amount of cheese on top.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted, bubbly, and golden.
  • Allow to cool for a few minutes, then serve hot, adding a sprinkle of fresh cilantro if desired.

Notes

For the freshest flavors, consider adding sautéed onions and garlic to the filling. Store leftovers in an airtight container for up to three days and reheat in the oven for the best texture.
