Ingredients
  

For the skewers

  • 1.5 lbs chicken breast, cubed Use fresh chicken for best flavor.
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder Adjust to taste.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish Adds freshness and flavor.

Preparation

  • In a bowl, combine the olive oil, chili powder, garlic powder, salt, and pepper. Add the cubed chicken and marinate for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken and bell peppers onto skewers, alternating between chicken and vegetables.
  • Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  • Remove from the grill, garnish with fresh cilantro, and serve hot.

Notes

For an extra kick, add some sliced jalapeños to the skewers. If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning on the grill. You can customize your skewers by using shrimp or beef instead of chicken.
