Ingredients
  

For the Marinade

  • 1 to 1.5 pounds Pork Tenderloin Choose a tender, high-quality pork tenderloin.
  • 2 tablespoons Olive Oil Extra virgin olive oil recommended for better flavor.
  • 2 cloves Garlic, minced Fresh minced garlic is preferred.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper Freshly cracked for better flavor.
  • 1 teaspoon Dried Thyme Fresh herbs can be substituted if desired.
  • 1 teaspoon Smoked Paprika
  • Juice of 1 lemon Lemon Juice Fresh lemon juice adds brightness.
  • As needed Fresh herbs for garnish (optional) Such as rosemary or thyme.

Preparation

  • In a mixing bowl, combine the olive oil, minced garlic, salt, black pepper, dried thyme, smoked paprika, and lemon juice. Whisk together to form the marinade.
  • Coat the pork tenderloin generously with the marinade, ensuring it is fully covered. Use a resealable plastic bag for this step if desired.
  • Let the pork marinate for at least 30 minutes or up to overnight in the fridge for a deeper flavor.
  • About 15 minutes before grilling, preheat your grill to medium-high heat.

Grilling

  • Remove the pork from the marinade and let any excess drip off.
  • Place the pork tenderloin on the grill and cook for about 6-8 minutes on each side, depending on thickness. Use tongs to turn the pork.
  • Check the internal temperature aiming for around 145°F (63°C) for juicy results.
  • Once at the desired temperature, remove the pork from the grill and let it rest for 5-10 minutes before slicing.
  • Slice the pork tenderloin into medallions and serve warm.

Notes

Marinate longer for more flavor. Bring pork to room temperature before grilling. Oil the grill grates to prevent sticking.
