Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • Pat the salmon fillets dry, drizzle with olive oil, and season with salt and pepper.
  • Mash the avocado in a bowl and mix with lime juice, salt, and pepper.
  • Ensure quinoa is cooked according to package directions and set aside.

Grilling

  • Place the salmon skin-side down on the grill and grill for 5-6 minutes on each side until cooked through.

Assembly

  • On a plate, layer the cooked quinoa and place the grilled salmon on top.
  • Spread the avocado cream over the salmon and garnish with fresh cilantro.

Serving

Notes

For extra crispiness, grill the salmon skin a bit longer. Store leftovers in an airtight container and reheat in the microwave with a splash of water to keep it moist.
