Ingredients
  

For the Salmon and Shrimp

  • 4 pieces salmon fillets (6 ounces each) Rich in omega-3 fatty acids.
  • 2 tablespoons olive oil Adds flavor and moisture.
  • 1 tablespoon lemon juice Brightens up the meal.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 teaspoon dried dill A wonderful herb for fish.
  • Salt and pepper to taste
  • 1/2 pound shrimp, peeled and deveined Complements salmon beautifully.
  • 1 clove garlic, minced More garlic for flavor.
  • 1 teaspoon lemon juice Adds freshness.

For the Cheesy Broccoli

  • 1 pound broccoli florets Nutritious and pairs well with cheese.
  • 1 tablespoon butter Adds richness to the cheese sauce.
  • 1 tablespoon all-purpose flour Thickens the cheese sauce.
  • 1 cup milk Creates a creamy sauce.
  • 1 cup shredded cheddar cheese Star of the cheesy sauce.
  • Salt and pepper to taste

For the Corn

  • Corn kernels Adds sweetness and crunch.
  • Butter for corn Enhances sweetness.
  • Fresh parsley for garnish Adds a nice touch.

Instructions
 

Preparation

  • In a small bowl, mix together the olive oil, lemon juice, minced garlic, dried dill, salt, and pepper for the salmon marinade.
  • Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.

Cooking the Salmon

  • Preheat your grill or a skillet over medium-high heat.
  • Cook the salmon for about 4-5 minutes on each side until golden brown and flakes easily with a fork. Remove and set aside.

Cooking the Shrimp

  • In a small bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper for the shrimp.
  • Heat a skillet over medium-high heat and add the shrimp. Cook for 2-3 minutes on each side until pink and opaque. Set aside.

Making the Cheesy Broccoli

  • Steam the broccoli florets until tender, about 5-7 minutes.
  • In a medium saucepan, melt the butter, add the flour and stir for about a minute.
  • Gradually whisk in the milk and keep stirring until the mixture thickens, about 3-4 minutes.
  • Stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper.
  • Pour the cheese sauce over the steamed broccoli and mix well.

Preparing the Corn

  • In another skillet, melt a little butter and add the corn kernels. Cook for about 5 minutes, seasoning with salt and pepper.

Serving

  • Arrange the grilled salmon fillets and shrimp alongside the cheesy broccoli and corn. Garnish with freshly chopped parsley and lemon wedges.

Notes

To ensure a crispy salmon skin, pat it dry before marinating. A hot grill or skillet is key to achieving a lovely sear. Don’t overcrowd the pan when cooking shrimp.
